Making Process
The process of making chocolate in a melanger
1. Put all the ingredients in a melangeur consistently
Ingredients are dipped from fattest to most solid. Cocoa butter with ground cocoa or cocoa nibs first (in case of bean-to-bar). Sugar is added last.
2. Grinding and mixing
Since chocolate is a vegetable fat-based product, ingredients won’t dissolve. In order to achieve smooth-n-silkу texture, a melanger needs to work from 48 hours nonstop to properly grind dry substances and mix them with fats.
3. Unloading
Upon reaching the desired consistency, the chocolate is unloaded for further manufacture or storage. Melangers with a capacity of 20 kg or more are equipped with a automatic tilting gear for the bowl , allowing to unload a large bulk. We recommend using a vibrating sieve during unloading and cleaning to filter the chocolate out of the unmilled pieces, providing purity and safety of the final product.
Not Only Chocolate
Due to stone grinders and mixing scrapers, melangeur replaces three pieces of equipment of a large factory – pregrinding the ingredients, fine grinding and conching.
Rather than making chocolate from cocoa, melangers are used to make other things:

Thermoregulation
Will measure product temperature themselves and won’t allow the mass to heat up above the temperature you’ve set. In case of a power outage, they’ll sleep until you allow them to continue working.
Automatic Tilt
Automatic tilt will adjust the angle or position of the grinding surface automatically. While grinders typically require manual adjustments to set the desired grinding angle, some advanced or specialized grinders may incorporate automatic tilt features for enhanced precision and convenience.
Thermal Sensor
You set the maximum allowed temperature of the mass and the melangeur follows the speed in order to not overheat the contents.
